I’m sure you have noticed the large shiny trailer on the north side of SoCo. You know, the trailer with the large flashing “Chicken” sign? If the sign didn’t already intrigue you enough to stop and take a taste, maybe this review will.
Fried Chicken is More than a Meal in the South
Growing up in the South, fried chicken is not just a meal, but a way of life. After I moved to Austin, I quickly realized there aren’t many restaurants where you can get genuine Southern fried chicken. On my first trip to Ms. P’s, I was expecting the worst but hoping for the best.
Ms P’s – The Order
At the order window was Ms. P herself. She was welcoming and took the time to explain how she prepares her chicken and some of her favorite side items. I went with the three piece chicken (1 wing, 1 leg and the chicken tenderloin) and, on Ms. P’s recommendation, The Marty (Mexican Street corn with jalapeno spiked aioli, cotija cheese and shaved pepper and lime).
The trailer was pretty busy and Ms. P informed me it would be about 15 minutes, as the chicken is made to order. I took the opportunity to people watch on South Congress. The lot is also BYOB which is always a plus . I didn’t even have time to finish one of my beers from the 6 pack before the order was over.
The Chicken
The chicken looked fantastic. It was nice golden brown and crispy on the outside. As odd as it may sound, the chicken was the prettiest looking fried chicken I have seen. But, it doesn’t matter how attractive the chicken is, it all comes down to the taste.
Ms. P’s implements a two-step brining process incorporating fresh herbs and 12 spices. You can tell Ms. P’s is very proud of her chicken as she should be. This chicken was awesome! It was crispy on the outside and extremely moist on the inside. The first bite has a hint of sweetness followed up with the perfect amount of spice. The chicken is not heavy and greasy like most Southern fried chicken. Instead, Ms. P’s is very light and satisfying.
The Marty
The Marty was the perfect compliment to Ms. P’s chicken. The corn had a little of everything – spice, tart and sweetness. All the ingredients were fresh and the cotija cheese meshed everything together perfectly. The Marty was so great that I have tried to duplicate it several times at home but I’m still working on it.

Ms P’s Final Verdict
Ms. P’s is definitely one of the better food trucks in Austin. Ms. P herself is very friendly. The atmosphere is very inviting and a cool place to sit and drink a few drinks with your friends. Ms. P definitely makes everyone feel like family and on top of that, her chicken is incredible.
